A more robust extra-firm cheese, first made in southern
Italy, around Rome. Today, Romano is made in the United
States as well. Domestic Romano is made from cow’s
milk. Imported varieties may also be made of sheep’s
or goat’s milk. Romano is sahrp, flavorful cheese
with a puckery bite to it. It is a popular ingredient
in pastas, souffles, omelets, and minestrone soup.
