What to pair with Chardonnay? Remember a few simple tips. Try to pair with foods that use Chardonnay's bridge ingredients (ingredients that bridge the flavor of the wine to the food) such as toasted nuts, tarragon, bacon, and mushrooms. Rich dishes (a robust corn chowder or halibut in cream sauce, for example) pair well with Chardonnay; they accent the creamy feel of the wine. Steer clear of overly spicy dishes and try to avoid dishes having so many heavy flavorings that they upstage the delicate range of flavors in the wine.

BBQ Lemon Pepper Salmon with Parsley, Lime & Caper Dressing

Method:
Preheat the barbecue to hot. Make sure the grill bars are clean. To make the dressing, mix all ingredients together in a small bowl. Brush the salmon filets with extra virgin olive oil and season with lemon pepper. Put the filets presentation side down on the grill and cook for 2 minutes; turn over and cook for another 2 minutes. Remove the fish from the barbecue and rest for 1-2 minutes in a warm place; this will give you medium-rare salmon.

To Serve:
Place one salmon filet on each of four large plates. Top with a generous tablespoon of dressing and serve immediately. Serve with some freshly steamed potatoes and a crisp green salad.

Grilled Squid with Lemon Pepper & Herb Salad

Roughly cut the squid into 2 inch squares, then put in a bowl with some extra virgin olive oil and lemon Pepper Spice Blend; leave to marinate for 30 minutes. Preheat the barbecue to hot, making sure the grill bars are really well cleaned. Put the squid on the hot grill and cook for about 1 minute, turn over and cook for another minute, then remove and put into a bowl. Add the mint, parsley and cilantro leaves to the bowl, drizzle with more olive oil, some more sea salt, and the juice of one lemon. Gently toss to mix.

To serve:
Divide among four plates. Place a quarter of lemon on each plate and serve immediately. Serves 4.

Bleu Cheese Mousse with Red Grapes and Walnuts

In a food processor, blend bleu cheese and 8 ounces of cream cheese until smooth. While machine is running, add heavy cream in a slow, steady stream. Season with salt and pepper. Place mixture into pastry bag with star tip. Pipe cheese onto Table Water Crackers. Garnish with thin slices of red grapes and walnut pieces.
