A Greek-style cheese. It is sometimes called “pickled cheese” because it is cured in a brine solution.

Appearance:   White lumpy mass; may be packaged in brine
Texture:   Soft; flaky or crumbly; usually very moist
Taste:   Salty, tangy, sharp
Uses:   Appetizers - served with dark rye bread, stuffed black or green olives, or with orange, melon, or avocado slices Salads - crumbled in green salads
Entrees - added to stuffed green crumbled in green salads

This Cabernet is a full, complex wine with concentrated flavors of black cherries, currant, and spice. The tannins and months of oak aging result in excellent structure and character.
