A cheese that originates in the U.S., Monterey Jack is one of the mildest cheeses made in this country. It is usually ripened only three to six weeks. Serve with a fruity wine such as Gewurstraminer, Riesling, Chenin Blanc, or Pinot Noir.

Appearance: Blocks or wheels; some varieties may have a thin natural rind; creamy white interior
Texture: Supple, resilient; smooth, with few holes

Uses: Cooking – melted on hamburgers, casseroles, omelets
Sandwiches – sliced or melted on beef, ham, turkey sandwiches
Snacks – sliced, served with crackers or fruit
